As a full-time social media influencer, you have a number of exciting projects on the go at one time. What does a working week look like?
It changes depending on what projects I am working on, but generally it involves filming a YouTube video, creating content for Instagram posts or business collaborations, recipe testing and food photography, editing and other computer work. I also like to fit in some study time to improve my photography and editing skills.

You've written two cookbooks and have just launched your third vegan cookbook, 'Oh Sweet Vegan'. Walk us through what a typical daily meal plan looks like for you?
For breakfast I love smoothie bowls, particularly açai or overnight oats! For lunch a buddha bowl or salad bowl with fresh greens, veg and pan fried tofu/tempeh or leftovers from the night before. For dinner I typically have pasta or curries and baked potatoes on the side. Occasionally something for dessert from my book Oh Sweet Vegan, particularly the lava cake!

The year 2020 has been unlike any other and subsequently our mental health has never been more important. What are some ways you practice mindfulness?
Keeping focused, living in the present moment and appreciating the little things. It can be hard to slow down in the busy world, especially working online as there’s always something new we need to focus on with trends, so allowing myself rest when I feel I need it!

Keeping active is a strong passion which you showcase in easy-to-follow workout videos on Youtube. What are your top three equipment-free exercises?
Tricky question as I have so many favourites but my top 3 are inch-worm push ups, dead bugs, and squat jumps!

You have a highly engaged online community who are empowered by your motivating food and fitness tips. Who are some individuals that empower you?
My family, partner and close friends certainly motivate me to do my best and what I want in life.
Question 06
With a majority of your work conducted online, can it sometimes be difficult to switch-off digitally? What are some ways you find balance in your work and life?
It is difficult to switch off and some days I feel like tossing my phone off a cliff haha! Making time for fitness and outdoor activities is important for me to switch off and I have recently started pottery which is fun, relaxing and a great way for me to not focus on social media.
