How to make it:
- Add the plum syrup, lemon juice and knob of ginger to a cocktail shaker. Muddle the ginger to release the flavours. Place the lid on the shaker and shake vigorously.
- Add crushed ice to two glasses and pour mixture from shaker over the ice. Top with soda water and garnish with a sprig of thyme. Serve straight away.
