Plum + Smoked Salmon Scandi Bowl
What you’ll need (Serves 2):
- 2 Queen Garnet plums, finely sliced
- 1 avocado
- 1 small fennel, finely sliced
- Handful watercress
- 150g hot smoked salmon
- 200g ancient grain rice blend (or brown rice, quinoa, wild rice blend)
- Dressing:
- ¼ cup olive oil
- ¼ cup Queen Garnet plum nectar
- 1 tbsp balsamic vinegar
- 1 tsp wholegrain mustard
How to make it:
- Begin scandi bowl assembly with ancient grain rice blend at the base and layer over with salmon, watercress, fennel, avocado sliced plums and top with fennel fronds.
- Whisk olive oil, nectar, balsamic, wholegrain mustard until combined and pour over salad.
