Pickled Queen Garnet Plum Slices

Sweet, tangy and gently spiced, these pickled Queen Garnet plum slices add a vibrant burst of flavour to rich dishes.

Method

  1. Wash plums, remove the stones, and cut into thin wedges.
  2. In a small saucepan, combine vinegar, water, sugar, salt, cinnamon, star anise and peppercorns. Bring to a gentle simmer until the sugar dissolves.
  3. Place plum slices in a clean jar or container.
  4. Pour the hot pickling liquid over the plums until fully covered.
  5. Allow to cool, then refrigerate.
  6. To use
  7. Ready in 2–4 hours but best after 24 hours. The acidity cuts through the richness of pork and parmesan while the warm spices complement braised dishes beautifully.
